I think of myself, and have been told, that I am an excellent cook / chef. I have made Stroganoff many times and different ways. I was skeptical at first, but WOW! Knocked my socks off. It is SO easy, simple AND inexpensive to make. WTG, Emeril! And for the person who gave him one star on this (forgetting to cook the noodles......TRY again. LOL!

Never made stroganoff before, made for my boyfriend (who grew up eating this, and we both agreed it's the best stroganoff we ever tasted! Was super tasty and the cayenne pepper added such a nice kick, and the sauce was the perfect consistency, not watery like other raters have said (people, invest in measuring cups!. I added just a hint of red wine to the meat and it was well worth it. Was even better the next day!!!

@FOODisFAB- you gave Emeril 1 star for his recipe when you didn't follow it. It calls for COOKED pasta in the list of ingredients. Next time read the entire recipe through before you start, FOLLOW THE RECIPE and use common sense. I have been making Beef Stroganoff for a long time and this is a standard recipe with that special Emeril touch. It was delicious

I love this recipe, it's simple! The second time I made it I realized that I didn't have any beef broth, but I had some cream of mushroom soup so I added that and it worked out just fine, a bit creamier than the orginal. I also add more garlic, as I love garlic. Another thing I do is pour it into a casserole dish, sprinkle some parmesan on top and bake it for about 15 minutes at 350 degrees.

Seriously quick and easy dinner. For those reviewers writing that its not a better dish, I say GET REAL! This dish was featured on a "College Cooking" episode. Its an okay dish for families, and an EXCELLENT dish for toddlers/preschoolers and college freshman/sophomores living alone and figuring how to cook. Is it the best Emeril recipe? Not by a long shot, but still a decent dish. I would give it a "B". Oh, and add more sour cream than what the recipe calls for. Just go for it, and add a full cup. The flavors will be better as it "marinates" together. I myself make it for my boys (3 and 4 yrs a day ahead and they luv it!

@uconn. Seriously? the ingredients said cooked pasta. If you cant read a recipe, and then fail to make it right, don't then come out and pan the recipe just because you can't cook.

Honestly, I am not a chef, not do I want to appear condescending to Emeril who generally has some absolutely fabulous recipes. However, just about everything in this recipe was wrong right from the start.
I like to have step by step directions written so that I clearly know the sequence of preparation. Unfortunately, in the directions, Emeril never said to boil the pasta first. As a result, I dumped a 1/4th of a box of pasta into the concoction only to realize that the noodles never cooked (fortunately I picked up on the mistake within 5 mins or so, so I took a spatula and individually removed each noodle.
So I took the pot off the burner, then boiled the pasta, returned the pasta to the pan, cooked it all together and it was pure soup. Seriously!!! So I tried to get the consistency right, added much more sour cream, went to taste it, and it was as bland as bland can be. It had about the same amount of flavor as beef broth, no more, no less. Not to mention it never really thickened. My only solution to the flavor issue was to add more of the essence, which helped a bit.
Lastly, there was like hardly any beef in here. I'm not a huge carnivore by any means, but IT'S BEEF STROGANOFF! There was like 5 parts soupy beefy water to 1 part ground beef here!! C'mon!
Total and utter waste. Sad thing is that I literally have nothing else I can cook in my house and bring to work for lunch tomorrow, so this is going to have to be it (because I just couldn't bare to eat it tonight!. Lunch is always my favorite time of the day. I'm not so sure I'm looking forward to it tomorrow!!!
