    Great with barbecue; add a little celery for a bit more crunch. Didn't add the bacon grease, so it was fairly light.

    I was tired of the traditional black-eyed pea preparation and wanted to try a new twist for New's Years. Everyone that sampled this recipe went on and on about how much they liked them; requesting me to pass on the recipe. Very simple to put together! Highly recommended. (Suggestion: I added a couple more slices of bacon. The wine vinegar masks the flavor if not

    This is a great recipe and compliments grilled foods nicely. It has become a staple with our bar-b-ques. I reduced the vinegar to 1/4 cup and added a splash of balsamic vinegar for sweetness. It has great presentation with its color and chunkiness. Thanks Emeril!

    I made this last year for my annual Church-wide picnic. IT WAS A HIT!

    I too kept sneaking into the fridge to test it every 10 minutes while it was setting.

    I did double the receipe and added more bacon for flavor!

    This salad was fabulous! I made it and put in the frig to let chill but found myself sneaking into the frig for a a "taste" almost every 10 minutes! Emeril you never let me down! I added green beans to the recipe and used turkey bacon instead. My kids don't like beans that much but loved this dish.

    Wow! I thought this was fantastic! I used turkey bacon which left me virtually no grease to add to the salad. I let the bacon char a little on the pan and then added a splash of chicken stock to deglaze it. Then I dumped that in the salad. I made my own stash of Emeril's Essence from the recipe too, although I think you could just add cayenne, garlic powder and salt and pepper and get a good result. I personally love the spice combo and wouldn't change a thing. Thanks Emeril.

    I thought this was passable, but nothing to get too excited about. The flavor was all vinegar and bacon--not much in the way of herbs or anything like that. And then it was really oily, which I didn't care for.
