My oven wasn't working and my Mom's 85th birthday was approaching. She wanted chicken and baking one wasn't going to happen. I tried this recipe and it was the hit of the party. Mom has troubles with spicy foods but this recipe didn't cause her any problems. I couldn't find Emeril's Essence and didn't have the inclination to make up a batch so I used Zatarain's Creole Spice Blend and it turned out fine. I made 4 batches of this recipe and finished them all off in a large Le Creuset Deufeu to simmer for the required 30 minutes. Quite an assembly line but easy, easy, easy. For speed I left out the mushrooms....just a few of the 16 guests were mushroom fans and they never knew what they missed. Served it with Jasmine rice and glazed sugar snap peas with carrots. Fruit and vegetable trays, a salad and 3 desserts rounded out the party.

WOW - Awesome flavor, DH loved it. Easy, simple and the flavors pack a savory flavor. I served it with gluten free potato gnocchi and fresh sauteed spinach. DH wants to know when I'm making again.

I have made this several times and each time its such a delight. Its easy and "never fail". Its great over mashed potates as well. The leftovers and delish as well!.

Fantastic chicken -- I've made this recipe twice since finding it here a week ago. I didn't have Essence, so I used a little Adobo in its place. I also used dried rosemary, and served this over whole wheat pasta. It came out wonderfully, and the leftovers were even better!

This is a fantastic template.....I improvised with what I had and it was delicious. I have no doubt that as written, it's even better. I only had boneless, skinless chicken thighs and did not have mushrooms nor time to assemble the spice blend (just added a few of the components that I had on hand. The flavor and texture of the sauce was wonderful and we served with mashed potatoes.

one word: YUMMY; I usually find Mr. Emeril's receipes difficult (even when stated easy. However, I am unsure if my cooking skills have increased but this receipe was easy to make, tasty, and fairly healthly. I was able to finish this in the suggested time and didn't need to tweek anything. Thanks Mr. Emeril for this wonderful chicken receipe. :
