    Although we liked the chicken, we thought the sauce was greasy. Any ideas on that?

    Easy, inexpensive, impressive. Would serve to guests. One suggestion ... sauce was a little thin when finished, so cooked uncovered an additional 5 mins or so, till sauce cooked down and thickened a bit. Family loved it and eagerly ate leftovers next day, and said it's a keeper. Thanks Emeril!

    My husband and I both loved this dish. I followed the recipe exactly and served it over lightly buttered egg noodles seasoned with chopped fresh italian parsely. Egg noodles are what he used when this episode aired.
    The only suggestion would be to use skinless thighs, since it would eliminate some fat, and the skin really didn't add anything to the flavor.
    Will be making again soon!

    This recipe was decent for a weeknight meal, but it certainly did not rate with the best of the best. I followed it exactly, and served it over linguine, like the photo. The sauce lacked depth, and may have benefitted from the addition of some wine (marsala or sherry or perhaps some balsamic vinegar. I expect that the leftovers will be better when the flavors blend. I also used my own fresh rosemary. It just needed something else. There was plenty of heat.

    I didn't have cayenne, fresh rosemary or fresh parsley. But this recipe came out great nonetheless. Makes lots of tasty sauce for rice.

    I used canned mushrooms, dried spices and tomato sauce instead of tomato paste and this was still one of the best recipies I've ever found. I can't imagine how good it is when you follow the recipe as published.

    I was looking for something healthier so skinned the thighs first (but kept the buttah!, and it was delish. My whole family loved it, and the house smelled great.
