My mom made almost the same casserole when I was growing up oh so many years ago...She used 2 cups of milk instead of 1 cup half & half and used bread crumbs instead of texas toast. After making this version I think I like hers better. Don't get me wrong, this is still a great casserole but the consistency of the texas toast was not as good as bread crumbs would be. This was also much more rich than what my family is used to eating, next time I will use turkey sausage and season it myself, milk instead of half & half and I may switch to lighter cheddar cheese. I made 2 smaller casseroles which was fine for my family of 4. We had the first one as a Christmas morning indulgence and are about to have the second one New Years day, in a few minutes. I made this for my family for Christmas morning. Because the casserole is mostly prepared the previous evening, you can enjoy more time with your guests. Everyone loved the recipe!

This was really easy to make, but next time I would add 3 or 4 more eggs. Also, I will experiment and add more stuff like maybe diced tomatoes, peppers, etc.

I wish I'd read the reviews first. It needed more eggs, more cooking time, and more flavor. I'm glad I had a practice run before serving it to guests. I'll try something else and recommend you do too.

Don't try to use Egg Beaters in this receipe. I used 4 real eggs and Egg Beaters to equal 8 eggs. After baking covered for 30 minutes at 350 I removed the foil and the center was not set. I bumped the heat up to 400 and baked it another 10 minutes. I could tell the outer edges were done, but the middle was still to wet. By the time I got the middle set, the outside edges were too dry.......I think it would have been very good if I hadn't over baked it trying to get it set. I think the egg beaters just made the caserole too wet.
