    This is the BEST breakfast casserole for company and family! I prepare it the night before Christmas or Easter for family and they all LOVE it. This is a KEEPER for your cookbook. Emeril, you ROCK in the kitchen!!!

    my mom has made this several times w/o the texas toast. i made it yesterday exactly according to the recipe, and it was delicious! made the night before and baked 30 mins, perfect for breakfast or brunch. leftovers microwave easily too! used pepperidge farm 5 cheese tx toast and jimmy dean hot breakfast sausage; aged white extra sharp cheddar.

    This recipe is a variation of a friend of ours but is still good. My friend uses Velveeta slices on the bread instead of the cheddar. Also, we use milk instead of half and half. Lastly, it definitely needs something more....onions, peppers, and hint of garlic powder, more pepper, etc. Also, I have done some variations that have been real crowd pleasers: Mexican: Mexican Velveeta, cubed ham, diced tomatoes, green chilis, cilantro, pepper jack cheese sprinkled on top while baking, topped red or green salsa (try both for presentation!, and a dollop of sour cream! Of course you can always go vegetarian (self explanatory or go Greek with Gyro meat and goat cheese on top!

    I really love this easy and deliscious recipe-as is or, mix it up a little! I like to cube my bread and add about 1 cup of corn bread stuffing-Great!!

    I make this casserole a lot when I have extra company at our house. I have always made the recipe as is with NO CHANGES. My family loves it and everyone I have ever made it for asked for the recipe. I think it is simple and takes great. I like some of the ideas that people listed to "spice" it up but would not change the basic recipe as I have never had it be soggy or un-edible. Enjoy and try it for yourself!

    Everyone talks about major tweaks but the only one you need is DON'T USE TEXAS TOAST. I never even tried it this way maybe because I'm from Texas and I know that crap is just thick sliced Wonder Bread. This is a great dish but it's more akin to a savory bread budding and you have to make it as such. Use any bread with a good crumb like day old baguettes, ciabatta, sourdough, etc. and it works great. My picky kids loved it and I've used it for everything from holiday brunch to tailgate parties.

    I have never had a soggy casserole as I have read on some of these reviews. I make this every year for Christmas and Mother's day. I use a dozen eggs instead which increases the baking time a LOT. Maybe that is why some of yours are coming out soggy? . I also add pan fried shredded potatoes or diced potatoes and sometimes crumbled cooked bacon. Eveyone loves it and it is very easy.

    I was really hoping this would be a great weekend dish, yea not so much. I thought it was soggy and it does need a lot of tweaking. I let it cook a little longer to see if it would crunch up a bit, but it didn't.

    I got this recipe from a friend and tweaked it on my own. (This version is not so good but it is easily modified. I had made it so many times that I had forgotten I had tweaked it. When I was looking it up to send it to some friends, I remembered that I had made all those changes!! Fortunately, Emeril had evidently made the same changes when he made this recipe for Good Morning America!! Check it out!! You'll be alot happier!!

    Simple changes I made to help cut my time in half? I use cubed ham instead of doing sausage or bacon. I also use more eggs like the GMA version, I use a bigger pan (the men in our household can't handle a small pan of this, and I use everything you would put in an omelet - I use a green pepper, red pepper, yellow pepper, tomatoes, onions, salt, pepper, and cubed ham...

    Using ham cuts my time down to a 15 min. preparation time!! I also buy a veggie medley from the produce section at the store that cuts my time there as well. It is the perfect amount and the men love all the extras in it!! It also makes for a much more colorful and pretty dish.

    Last - I use Colby or Pepper Jack cheese on top...

    This version has been requested every time company comes and every time a holiday rolls around... so much so that I find myself making it pretty much any and every day off that the guys have.

    Go with the GMA version Emeril did and you'll be happy!!
