. . . if you read the reviews, most state to the effect "it was GREAT, but I had to extensively modify the recipe (e.g. use 50% - 100% more eggs and 1/2 & 1/2, cook for ~1 hr, use a 9x9 pan instead, etc.". Wow. There's a disconnect here; it's like nobody gave it a sanity check before it was published.

Anyone with a cursory knowledge of thermodynamics should see a big, red flag when the directions say to pull a 10x12 pan full of 35 degree eggy stuff out of a fridge and pop it in a 350 degree oven for "25 to 30 minutes" and expect the eggs to be set. After 25 minutes, I took its temp with an instant-read thermometer and it read 64 degrees. Please. 25 to 30 minutes? Really?

Mr. Lagasse - or one of his minions - needs to give this recipe a serious make-over.

Like I said, it's really good. Just don't follow the recipe verbatim or you'll be in for an unpleasant surprise

Well I am going to try this recipe this year.It sounds so much easier than cooking bacon, eggs toast for the whole family. I will put it together Xmas Eve night. My mother in law lives only about 5 minutes away so we will take it to her place Christmas morning, pop it in her oven while we exchange gifts, then hopefully enjoy a wonderful delicious no fuss breakfast!!! I will use all the other suggestions and modify accordingly! So thanks to all the reviews posted! I will have to cook extra texas toast and sausage on the sidfe for my 9 year old who does not like his foods mixed together!!!LOL

I added some eggs and cooked it a bit longer, but it has been great...every time.

I have made this recipe over and over again...everyone in my family loves it. Since I'm eating low carb now I sub the texas toast for any low carb bread and I add zuchini, onions, and spinach - great breakfast.

Wow! I never made a breakfast casserole before and this turned out GREAT! Everyone loved it! My Dad took the rest of it home with him! I put sausage and bacon in it and it was delicious! I will definitely make this again when I have a big breakfast! YUM!!!!!

I should have read these reviews before I tried this recipe. I did notice that the bread soaked up all the egg, so I ended up using 9 eggs and 1 1/2 cups of half and half, but I didn't increase the cooking time. The egg around the bread was cooked, but the bread was just mushy and gooey.

Being a novice cook, Emeril's recipes always seem complex and intimidating, but this was incredibly EASY and delicious. I decided to tackle this for an office breakfast, and it was literally devoured in less than 20 minutes! As suggested by other reviewers, I increased the eggs, half & half and cooking time; my ending result had a light and fluffy texture - perfect for a simple breakfast. I will definitely be making this again! :0

I have made this recipe several times and I LOVE it! I did try to make it in the morning once and it did not work...it must be cooled over night as the recipe states. I don't eat pork, so I use turkey sausage and it is wonderful!!
