While I have always loved Thanksgiving, eating the turkey was always a dicey situation. either the meat was too dry or it wold be underdone in an effort to keep it moist.Brining the turkey, changed all that...a perfect turkey moist and delicious. I will never cook a turkey any other way.

Normally Emeril's recipes are a little more complex then I am comfortable with but tried this for Thanksgiving and had rave reviews from all my dinner quests. Was easy to do and created the moistest turkey we had ever had.

Maybe I expected more. But the turkey was almost flavorless and my birds have been moister basting and cooking with the breast side down.

My turkey looked like a magazine cover! Very juicy, had great flavor, blew my husband away and even the white meat was moist. I had some trouble with the gravy, but that could just be me. When I remake this, I'll probably alter the gravy, but other than that its worth all the extra work!

It was my first Thanksgiving, and my mother-in-law was coming... It turned out PERFECT! Everyone exclaimed on how moist and tender it was and my sister-in-law said "Oh... it just melts in your mouth". When everyone left my husband whispered (as if his mother could some how still hear him "I didn't want to say so in front of my Mom, but that was the best turkey I ever had!" I had to agree, and I am usually very critical of myself... Thanks Emeril you rock!

This was the first time I've brined a turkey and it came out terrific. Moist and juicy and super easy to make.
