    Like others reviewers, I'm now known as "the turkey lady". Once again, this will be feeding 50 or so folks on Thanksgiving. Another turkey will join, but I KNOW mine will be the best; it has been for 5+ years. I only change one thing (my secret, but would NEVER change the essence...of Emeril!

    "Turkey lady for life" is what my family voted me after we polished off the entire bird last year. I'm back for this recipe again upon request of the whole family! It's perfect. The only thing I'm changing - buy a bigger bird.

    I HAVE BEEN MAKING THIS RECIPE FOR AGES IT IS SO GOOD I REFUSE TO TRY OTHERS. THANK YOU EMRIL. MY FAMILY AND FRIENDS LOVES IT I MUST ADMIT THAT I AM HESITANT TO SHARE BUT I DO BRAG THAT ITS "EMRILS".

    The brine was wonderful.. I only used half of it for the 2 cornish game hens since it was only for my husband and I. I doubled the rosemary and oranges since I didnt have any lemons.. Let me tell you, it was delicious.. I plan to use the same brine but only for the crown pork roast.. Once you brine, you get addictive...
