    I had heard about brining turkeys last year but didn't try it until this year. I will NEVER make a turkey again without brining! Several of my guests (and I as well thought it was the best turkey we'd ever had. I ended up using a small cooler for the brining which was perfect for keeping it cold enough. Stuffing the cavity with the fruit and herbs gave the bird fantastic flavor. Don't hesitate to try this recipe - even the gravy was luscious! Don't forget to cook the bird breast side down for the first hour! The outcome is well worth any time spent!! THANKS EMERIL!!

    The best turkey I have ever made. I've been cooking turkeys for many years and am considered my everyone who has ever eaten my turkeys that they are the best. A few years ago I started Deep Frying my turkeys because of how noist they come out. I will never deep fry a turkey again. This is the only way I will ever make turkey. It is well worth the extra time. I followed the directions without making any changes. No changes are needed at all. Just follow the directions and you will have the best turkey you ever had. Even if it is your first time ever making it.

    This was my very first time making the Turkey as well as others and I was so very nervous about the whole process! My Mom usually makes it and it's the best so I had a lot to live up too. I thought placing turkey in water, salt and sugar was odd but I trusted Emeril and went ahead with the brine and did this about 24 hours before cooking the turkey. This whole process was so easy and the results where beyond delicious. My whole family loved loved the turkey, it was so juicy and tender. AMAZING! I recommend this recipe to anyone and everyone. Also the gravy was so yummy and there was so much we usually run out but we had enough for left over?s. The best!

    THIS WAS MY FIRST TIME MAKING A TURKEY, I WAS SO SCARED THINKING THAT IT MIGHT NOT BE GOOD, BUT I WAS WRONG, THIS TURKEY IS SO DELICIOUS, IT'S MOIST, THE FLAVOR IS JUST RIGHT. I GOT COMPLIMENTS FROM EVERYBODY. THIS RECIPE IS A KEEPER.

    This recipe is so wonderful. I had the moistest turkey and the flavor was wonderful too. Next time I make this and yes there will be a next time I will inject the brine into the meat as well. Oh ya I also added sazon to the brine and it was a good addition too. My friend said he did not need gravy on his breast meat because it was just so moist and adding the wine to the gravy was a speck of ingenus.

    Try this turkey and follow the exact directions don't skimp. It came out perfect. I thought that because the brine was so salty it would make the turkey salty as well but it was perfect. I also thought it might be bland but it wasn't!! Just try it you won't be disappointed. It is worth the extra effort!

    This was my first year cooking a thanksgiving meal. I made this turkey and it was absolutely perfect. My husband loved it and I did too! Emeril always makes things look so easy, and I love his recipes. But this one definitely takes the cake!

    This year was my first time making a turkey EVER! I was very nevous, but you can't go wrong with this recipe! I brined a 20 pound turkey for 24 hours. (I had to use another half cup of salt and brown sugar along with another gallon of water I was worried that the turkey was going to come out too salty, but it wasn't salty AT ALL. Our friends all commented on how moist the turkey was! The only thing I would do different is double fresh herbs, since the turkey was a bit bigger. Another plus was how gorgeous it looked!! It was darker than the picture, and looked fake it was so pretty! Your guests will be in awe.

    This turkey was the best turkey I've ever made. So moist, so full of flavor. We were all amazed at the texture of the bird. The brining was so easy, and the recipe was easy to make. I will make this again at Christmas! It got rave reviews, and for someone who always struggles with making the bird, it was so awesome to have made something so wonderful. Hurray!

    My family is VERY picky. I know b/c last year they had a lot of stuff to say about the turkey. This year...all I hear was, "I LOVE IT," or "WOW!" Thank you soooo much! The turkey was very moist and tasty. I am forever thankful!
