    I used this recipe last year and was instructed to NEVER bake a turkey any other way besides by using this recipe! The turkey was so moist and and delicious. The spices gave enough flavor to enhance the turkey but not overpower it like some recipes do where they take away from the turkey. The turkey is supposed to be the star of the menu and this recipe lets that happen! It does take a little more time and effort but if you show how much you love your family by what's on the table, then this is the recipe for you!

    Did it last year for 2010 Thanksgiving and myself and my entire family said they never had a better tasting or moist turkey like this, Followed recipe to a T except left it in the brine probably 32 hours instead of the 24 but nonetheless it was fantastic and have the turkey thawing right now to go in the brine 24-32 hours before Thanksgiving Day this week. Will continue to use this for good and I am afraid to try the other brine recipes as it may not be as good as this one is!!! Thanks Emeril!

    I have used this reciep year after year to brine a turkey. 5 to be exact. It is awsome and a must..........

    Funny thing is this year I wanted to cook a turkey in my NEW Green Egg Grill and I was told NO... Just do that Brine Turkey....

    I've actually lost track of the number of years we've been using this recipe. It wouldn't be Thanksgiving without it. We buy a fresh 12 lb bird and roast it in our Showtime Rosisserie Oven. It self-bastes and makes the juiciest turkey ever.

    I seen this recipe on TV while my husband was stationed in Okinawa 2008. I couldn't wait to try it when he got back and we got re-stationed at Ft. Sill, OK. I made itfor Thanksgiving 2009 and it was a hit! Talk about cooked to perfection! I made it again last year. The first year I did 24 hour brine an last year was a few hours shy but it is over the minimum 4 hours it still turned out great. I love that it is stuffed with citrus, veggies and herbs rather than stuffing adds so much flavor and the first hour cooking it breast side down best idea to keep your turkey juicy. Thank you for this recipe it is a big hit with my Military Family and is the official Turkey recipe!

    I made this recipe for Thanksgiving last year, serving 32 people. They all said it was the best turkey they've ever eaten... and we've had some very good turkey dinners. It is excellent and not that difficult.

    I've tried a number of brine recipes for turkey. This is by far the best. I totally recommend it.

    I used just the brine soak portion of the recipe on a chicken. The whole family wants me to scrap the turkey and the commercial brine soak that I normally use this Thanksgiving and use this brine soak and serve 4 or 5 chickens instead. Said it was the best chicken they had ever eaten.
