I used this recipe on 2 cornish game hens..Great flavor..Only used what I had rosemary and orange..Next time I will add extra rosemary and orange..I'm using this same brine on a 3 lb Crown Pork.. Save the recipe for the brine, it's a must..

This is a terrific recipe. I have found that brining is the way to go and love how moist the meat is with this technique. But, as good as the turkey was, the gravy was to die for!. My husband and sons kept circling the pan on the oven, dipping a piece of bread in "just to taste." I was afraid that we would not get to the table before they had sampled the entire batch. I highly recommend this entire recipe. Will be doing it again for Christmas.

This is how you do a roasted turkey. I suggest a fresh kosher turkey. You'll pay twice as much, but it's worth it.

    The praise just doesn't stop!

I did my turkey this way for the second year in a row with rave reviews from my family last year and rave reviews from my in-laws this year. I'm amazed at the fabulous, juicy flavorful results I get with this recipe! With a thermometer (I used a digital probe leave-in one, this technique is completely foolproof! I had never done a turkey in my life before I tried this recipe, and by the results you would think I'd honed the art! My first two I've ever done in my life have turned out better than any others I've ever tasted. When I was searching for a recipe, I saw lots of them that called for ingredients I didn't think sounded quite traditional and "Thanksgivingy" enough. This one jumped out at me with its classic herbs and aromatic veggies. Take my word, it is excellent. Thanks, Emeril!
