I also used fresh brocolli-used 1/4 cup 1/2 and 1/2 and 1/4 heavy cream. It was fabulous-I would definitely make it again!

Simply LOVED this soup! I made the following adaptations: 1 had both FRESH broccoli AND cauliflower on hand, so used 1/2 of each instead of all broccoli, chopping into small flowerets and steaming for a min or two in the micro prior to adding to soup; 2 added some diced carrots (about a cup for added color, cooking them along with the onions; 3 used evap milk vs. heavy cream (only 2g fat and just as creamy! 4 used immersion blender just for a few turns around the pot because I too like more texture in my soups; 5only used 1 tbsp. butter at the end, and it was DELICIOUS, and the color combo with the varied veg I used was gorgeous! A fantastic soup! All of the other recipes I've found use "processed" cheese, which is disgusting. I do personalize this soup a bit; I use fresh thyme, rosemary and oregano, and I also add finely chopped carrots with the broccoli. I love the subtle taste the herbs give; the nutmeg provides a lovely taste as well. Wonderful poured into a breadbowl! YUM!

This was one of the best soups I've ever made, and I'm an experienced cook, and I've made a lot of soup. I used 5 cups of fresh broccoli, because that was what I had on hand, and I also used fat-free half and half instead of cream, because that was what I had. I didn't do the croutons, but I think if I were serving this for guests, I would add some kind of garnish. A rich, wonderful soup!

We love broccoli cheese soup, what a great dinner on a cold night. We usually add some chopped bacon or chopped ham to the recipe. If w could only get the girls to eat it....... maybe just a dream.....

LOVE IT!! whenever i want a rich creamy soup this is the recipe i go to. I never made the croutons, i just serve with garlic bread. I made a few adjustments: i use vegetable stock instead of chicken stock, add abit more pepper, i sprinkle some cajun seasoning and instead of frozen broccoli i use fresh broccoli, i just blanch it first.

I made the croutons and they were very good as well, and I am not a big crouton fan. I made a large batch of essence a while ago and use the seasoning quite often in the kitchen. It is really good! A coworker really loved the croutons as well. I used leeks instead of onion and it has a real nice subtle flavor. I highly recommend this recipe. This was my first attempt at broccoli cheese soup, but certainly not my last! I will be making this recipe over and over again this winter.
