Hands down this was the best grits dish I've ever had. Substituted regular ham for tasso ham and used marjoram for tarragon. You will not be disappointed!!

This was a good meal. You can use a dutch oven instead of the cast iron skillet. For anyone who doesn't want to pay a ton of money for the oysters, I think you can halve what the recipe calls for. I used chorizo in the place of the tasso and it worked out great. Everything else in the recipe is easily accessible from any grocery store.
