I'm so surprised that this didn't elicit higher reviews. I loved all three!! Being a self-proclaimed bruschetta aficionado, I love making them with atypical ingredients - I mean, tomato, basil, and parm are three of my favorite things in the world, but they can become a bit boring. But these toppings were unique and delicious. I am now a huge fan of eggplant, but when I made this for the first time around 3 years ago, I was not; therefore, I was incredibly skeptical about the eggplant topping. But it was SO good that I credit this recipe alone for turning me into a believer. And I'm honestly not a fan of olives either, and I even like the olive topping! The great thing about the toppings is that if you have extra, any one of them can easily be made into a pasta sauce later in the week. I obviously could talk about this recipe all day!

I have to admit that I am not an eggplant lover so I only prepared the olive and tuna. From the rest of the reviews I need to add the eggplant this time. I can?t find my printed recipe so I am back and really felt I should say these are excellent!! Thank you Emeril!!!

The best bruschetta in my opinion is the eggplant one, superb flavor which is intensified by the vinegar. JUST AMAZING AND SIMPLE

Made all three. Ranked them as eggplant #1, followed by the olive and tuna was #3. Friends all agreed....teh eggplant was the best! Thanks Emeril
