    My family takes brunch very very seriously. Every weekend, without fail, we do brunch. And blueberry pancakes are a brunch staple. I used to make pancakes out of a box, but never again.
    These pancakes were fantastic. Easy to make, light fluffy and tasty. I did make a blueberry sauce but using a different recipe as we don't use corn syrup in our house. Other than that, followed the recipe to a T and had the best blueberry pancakes EVER!!!

    Generally i do not like pancakes, but i wanted to give a homemade recipe the chance (plus i had a wealth of lemons. The recipe was so delicious i kept dipping my finger in the batter. I did not make the blueberry syrup, just warmed up some real maple syrup.

    Highly Recommended!!!

    I love blueberry pancakes, but I haven't always had the best luck making them from scratch. I also try to make healthy versions of pancakes. My favorite blueberry pancakes are the ones served at The Original Pancake House. I've been looking for a recipe to make at home that gets close to the taste and texture without all of the oil. So far, this recipe has brought me the closest to that goal. I made these pancakes this winter, and they were fantastic!

    The turned out to be the best textured pancakes that I?ve ever made. I halved the recipe and omitted the ? stick of butter (to keep it healthy. I also did not make the blueberry syrup, rather, I added blueberries to my batter. The lemon was a great twist as well! I eyeballed the lemon zest. I grated about ? of a small lemon. My recipe yielded 4 pancakes.

    I am looking forward to making these pancakes in the spring/summer when blueberries are back in season.

    Note: I tried making this recipe with gluten free-wheat free flour after discovering how incredible the original recipe was. Needless to say, the GFWF flour did not have the same properties. I'm still searching for a comparable gluten-free pancake recipe. In the mean time, this will be my go-to recipe for days when I want to splurge and indulge in blueberry pancakes.

    Great texture and fluff. Try less lemon zest so that it doesn't overcome the blueberry pancake

    We made these pancakes last week and they came out incredible. At first the batter seems too thick, but when you cook them you understand why. They are fluffy and airy. The blueberry sauce is exceptional, now i make the sauce and leave it in the fridge for the next batch. Never will i use boxed pancakes again. great job Emeril!!!

    Great pancakes. I've made Bisquick pancakes with a bit of lemon juice so I thought these would be similar. These were by far superior to those. They were so light and fluffy. I did a search for the recipe because I wanted to use the extra buttermilk I have in the fridge. I'm going to make another big batch and freeze them.

    We loved this recipe! The pancakes were so very light and the hint of lemon was perfect. I agree with the other reviews that the syrup recipe makes a bit too much. I'll cut it in half next time. (or make a double bath of the pancakes! For presentation purposes, I might next time serve the blueberry syrup in a little pitcher alongside. Top the pancakes with a few whole blueberries and the powdered sugar. The reason being is that the syrup (as delicious as it is looks unappetizing after it has soaked into the pancakes. So when serving this to guests, I'll serve it on the side instead.

    Wow, is all I can say. Never again will I purchase store bought pancake mix. This was so easy and has so much flavor. I made this for mom on Mother's day for brunch and paired it up with Emeril's quiche lorraine, fruit salad, cranberry mimosa and everyone loved it. Thanks, Emeril, for your wonderful recipes and allowing me to make my mom's brunch a success!
