    I only used the dipping sauce, for some baked sweet potato fries I made. Overall excellent recipe, but the sauce came out a little thin, so I made a few changes. I added about 2 tbsp more mayo, some dried parsley, and some dried chives, and used dried dill instead of fresh (this is what I had on-hand, and I chose to save some money and not buy a whole bunch of fresh dill for one recipe. The sauce was also MUCH thicker the next day. but overall, delicious!

    Everyone loved this when I served it. I really like fennel but it is not my husband's favorite. The batter disguised the fennel flavor enough for my husband to like it. The dipping sauce was wonderful and will be great on many different things.

    much healthier than potato fries.
    the dipping sauce makes them extra special.
    Extremely easy recipe.
    Be sure to cut in VERY thin strips, or they might be a bit chewey.
    EXCELLENT recipe!

    I have some friends who constantly wow us with gourmet dinners. I gave this one a test run and can't wait to serve this appetizer the next time I have them over! Unique and fabulous. Fairly easy, just time consuming frying small batches. It was a bit spicy for me, 'cause I'm a wimp, so for those of you who like things milder just cut back on the cayenne. Also, I used dried dill weed instead of fresh. Terrific!!

    I entertained some friends a few nights ago. We had Red Snapper and Shrimp to go with the fennel fries and buttermilk sauce.
    Out of 4 people there was a little left over shrimp and fish but the fennel was wiped out!! I cooked two bulbs and every one loved it.
    Thanks Emeril, you made a night with friends wounderful, with a great meal!
