Ingredients

  • 1 cabbage, about 2 to 2 1/2 pounds
  • 2 large Idaho potatoes, about 2 1/2 pounds
  • 12 ounces lean bacon, cut into 1/2-inch dice
  • 2 cups yellow onions, peeled and sliced lengthwise
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cups homemade chicken stock, or canned, low-sodium chicken broth

Directions

Preheat the oven to 375 degrees F.

Rinse the cabbage under cold running water and remove the tough outer leaves. Cut the cabbage into quarters and remove the hard core. Cut the cabbage quarters into halves and place, rounded side down, in a roasting pan.

Cut the potatoes in half crosswise and peel. Cut the peeled potato halves into quarters, and arrange in the roasting pan, alternating with the cabbage pieces.

Fry the bacon in a heavy medium skillet for 7 minutes. Add the sliced onions, salt, and black pepper to the pan and cook until soft, about 5 minutes. Evenly distribute the bacon mixture and pan drippings over the vegetables, then pour the chicken stock on top. Tightly cover the pan with aluminum foil and bake for 1 1/2 hours.

Remove the pan from the oven and allow to sit, covered, for 15 minutes before serving. Serve the vegetables with the bacon and broth spooned over them.

    Saved my Marriage !!

Rated: 5 stars out of 5
Wow !! I've heard that the key to a man's heart is in his stomach. Well, it works the same way for women too. My marriage has... been a bit strained lately. My wife is a huge cooked cabbage fan. So, I decided that I would cook her some, and maybe ease the tension. I found this recipe and thought I'd try it. I told her to be hungry when she got off of work (2:30 PM). I cooked it up. After she got home, we waited and talked a little, while the "good eats" finished baking. It was smelling soooo good. A long story short, she loved it. I'm out of the doghouse. And, I believe Emeril, you have SAVED MY MARRIAGE !!!! Thank you for an absolutely delicious, inexpensive, mouth-watering meal. Oh, and corn bread goes well with this.Read more

    Great veggies!

Rated: 5 stars out of 5
We made this last night for some friends to go with leg of lamb for dinner and it was a huge hit. I have had to copy this... recipe several times already. A great side dish for veggies with wonderful flavor. I did add some carrots for color and used turkey bacon to decrease the fat. This is really a keeper! Thanks Emeril!!Read more

The best cabbage recipe I have ever eaten, and the best side for a corned beef.
