I served this salad with a heavy pasta entree. It was perfect! The salad is "lite" and the croutons are incredible.
I cheated and used cooked shrimp (from the deli at the supermarket. I mixed the shrimp with the Essence and through them in the wok for one minute. The shrimp were tasty.

This could easily be a main course for a weeknight dinner.

Used regular Emeril essence and a different dressing and everyone raved about this. Be careful not to overcook shrimp. His dressing was too vinegary. Otherwise fantastic. Make the croutons - there addictive. You'll never buy them again!
