This was only my 2nd time ever cooking a turkey and my 1st time hosting Thanksgiving! I decided to do a larger 19 pound traditional turkey, and I tried this receipe on the 10 pound turkey. Let's just say, I could have used this receipe for both!! The cajun turkey was a HIT! My husband & son haven't stopped talking about it, and everyone kept asking me who did the turkey. Needless to say, I have already been told I must make this for Christmas. Hubby drank my beer, so I substituted tequila & water. DELICIOUS!!!!

I can't believe there are so many high ratings. I'm still bloated from retained water due to the INCREDIBLY high sodium content. Sad part is I did not salt the turkey or add the salt called for in the marinade. I also cut back on the amount of creole seasoning and it was still too salty. This was simply horrible. I agree with michele blair's rating.

I cannot believe the high ratings. Maybe it's because of a different creole seasoning? I used a Hefeweizen beer which is a wheat beer. Not too strong. I used local honey.

I should have known better looking at the ingredients. Just kicking myself for following all the rave reviews....

DELICIOUS RECIPE! Have tried it for two years and have always received positive compliments about it. The turkey was moist and golden brown. Remember if you make the marinade beforehand to keep mixing it so everything is evenly suspended in the solution. However, the turkey has never been that spicy both years and I'm thinking about doubling the marinade next year for a 12 lb turkey and adding a bit more cayenne and crab/shrimp boil.

I rosted a turkey for new years and they all loved it. I can hardly wait till summer and I use it in deep fat frying.

Tried this one out last year for Thanksgiving for something new. I toned down the spiced a little bit for the less spice loving in the family and it was soo good! Definitely try it if you are looking for something new and different. Also, it was my turn to make the turkey and also my first time ever!! It was very easy!

I made this Turkey for Thanksgiving after reading the great reviews. It is a spicy one, but delicious. Moist, complex flavors, and even better the second day. The marinade was too thick for my syringe so I basted often and it came out great. My family has requested it for Christmas dinner as well. One tip; rather than run around town to hunt down the allusive 'concentrated crab/shrimp boil' I ordered the exact type from Zatarain's website, it arrived in a few days and gave it a truly authentic Cajun flavor.
