    This was my second time cooking a turkey and it turned out great. I did find all ingredients even the shrimp boil but I did not boil it in water as the directions said. I just added the spices with all the ingredients. This was super easy to do. My family loved the turkey and they've now put me in charge of cooking next year. I enjoyed cooking this Turkey. Thank You Emeril!

    My whole family loved this turkey! I was unable to find the concentrated liquid crab boil so used the regular crab boil, boiled it in a small amount of water so that it appeared concentrated and, apparently, this worked just fine. Amazing amount of flavor that's not too overwhelming and not the least bit dry! Served with the creamed onions/crispy bacon ... wow - good stuff :

    This was my first turkey!!! And this recipe is great!!! I followed the recipe exactly except couldn't find crab and shrimp boil in the store, so i used fish sauce...i have NO idea if this would be a 'emeril aproved' substitute, but it seemed to be fine. The seringe i used was too small for some of the spices in the marinade, so i had to strain it first, then inject.

    I basted often and had to use a foil tent after 30-45 minutes.

    I made a gravy using the drippings. Made it while turkey still cooking. Used the baster to retrieve the liquid and let set for a few minutes, skimming the oil off the top. put in skillet on high and wisked in some flour, slowly, until my desired thickness. The gravy was amazing! It really took on the flavor of the marinade and complimented the turkey.

    I will be in charge of turkey again next year!!!
