    This was a really great way to use up onions and mushrooms. The flavor was delicious, and the quick crust recipe was a really nice find. I plan on using it for many other dishes. My 7 and 10 year olds couldn't get enough!

    I made this this weekend and it was great! I used monterey jack cheese because my store didn't carry gruyere. Also, I made my own recipe for the crust. I will definately make this again!

    I had a lot of extra mushrooms and decided to look for a quiche recipe that struck a chord. This one looked good so I made it. Not bothering to make the crust, I used a commercial pie crust and followed the rest of the recipe exactly. The crust was just fine. This quiche is unique in that it's lots more good filling than egg custard. It doesn't seem like a quiche for this reason. The ingredients really work together to end in an absolutely great taste. My only minor criticism is the extra salt added to the filling mixture. I don't feel it's needed. This is easy and impressive. Definitely a do-over!!!

    I read some comments that they felt this crust was too sweet, but I felt that it went well with the salty bacon and sweet carmalized onions. I think that anyone wanting to make this should try the crust, especially sense it is so easy to make. I also used half applesauce in place of the olive oil in the crust to lower the fat. Everybody loved it, and it made great leftovers. I used mozzerella instead of the other cheese.

    This quiche take a little more time but is well worth it. I used a little more bacon and cheese than was called for but the recipe is a keeper.
    You can serve this at breakfast or dinner but serve it with a wonderful wine and you need nothing else for a late night delicacy. Tangy and wonderful this will please even the most picky palate.

    I used a store bought crust, also didn't have fresh thyme. I sub.-herbs d'provence. Next time I will use less salt-a bit too salty with the bacon and the cheese for my taste with the added kosher salt. This is a keeper and I will be making it again. Thanks.

    This recipe is very flavorful and a must to try! Each ingredient stood out on it's own. They didn't over power each other. I used ground thyme (1 tsp. instead of the fresh and Fat Free 1/2 and 1/2 instead of heavy cream. So when I ate 1/4 of the pie, I didn't feel so guilty. My husband ate 1/2!
