Made a batch of 50 for 10 adults and two kids. Everyone raved about them and the orange ginger sauce. I also made a spicy thai-peanut dipping sauce but used cashew butter in keeping with the dish. Also a big hit.

This is great You can leave out the nuts and don't take time for the sauce! A great way to make chicken strips.

I generally think of chicken fingers and think of kids' food. However, I made this because I already had lots of leftover strips of chicken from making chicken quesadillas the night before. It turned out to be sooo good. "This is delicious. This sauce is genius," my boyfriend said. I even liked eating the chicken fingers without the sauce. I served it with white rice and steamed broccoli with a little lemon pepper on it. I purchased chicken already cut into strips at my grocery store to save a little time.
