Love this simple recipe. I added a little apple juice to create a paste so the sugar would adhere better.

I tasted a version of this at a holiday party where I work and just had to find a recipe to make it. I tried Emeril's recipe at my home holiday party and it was a crowd pleaser. Different yet tasty!

Simply fabulous! I made 10 lbs. of this bacon for my son's cross country team and not one piece left. This is the top requested dish 3 years in a row.

This sounds like a wonderful treat for breakfast! Do you think I could substitute turkey bacon in recipe? I'm minutes away from trying and should just go for it.

As a beginner cook (male, 62 this was the simplest recipe for this tasty sounding snack. I brought it as my offering to a family and friends Easter dinner. After cooking I cut the strips into 1 inch bite sized pieces, everyone loved them, thanks Emeril!

Use a whole tsp. of cayenne and follow the directions of degreasing quickly or it will stick.

I love cayenne and love bacon. The brown sugar balances the intense heat of cayenne. This is absolutely wonderful. Don't be afraid of the cayenne, if you enjoy spicy at all, this is sure to be a favorite immediately.
