    The worst ever, so oncredibly bitter niether of us could eat it. I used Inida Pale Ale and Stilton cheese, and only 7 ounces of the later. Something went terribly wrongI added more mild cheddar and porbably a cup of half and half. No go. Not being a beer drinker should I have used a different ale? IF I try it again will use regualr beer and porbably a regular blue cheese. We were so dissappointed cuz I really thiguth it would be delicious.

    First time making this kind of soup ,but it turned out great
    I did make a couple of substitutions. Used carrots instead of parsnips ( since we don't like them and my store didn't have any good bleu cheese so I used gorgonzola. It came out very nice.

    Amazing. I used carrot instead of parsnip. I also put the vegetables in a chopper so they were ultra-fine. I love this soup.

    This was so wonderful! Definitely going to make it over & over... I used Anderson Valley's Winter Solstice beer. I am going to try it with vegetable stock next time for my vegetarian friends - they were jealous!

    The best beer cheese soup, by far, that I've ever eaten. I used Atlanta Brewing Company's #'s Ale -- delish!!!

    I made this soup for a dinner party last night and it went down well. I did the main cooking on the stovetop and then transferred to the slow cooker to keep it warm. Also added a little extra cayenne pepper. So delicious I was licking the spoon before the guests arrived.

    I made this soup without the popcorn for a family birthday lunch in the winter. My family is from Chicago and Milwaukee and we loved the beer cheese soup. That says a lot coming from a family well-versed in beer, cheese, and beer-cheese soup. I think the blue cheese was perfect. Most of the beer cheese soups I have had in Wisconsin have that strong taste which we all liked. I liked the zing from the cayenne pepper.
