Directions

In a mixing bowl, add the avocados. Using a fork, slightly mash the avocados. Add the lemon juice, garlic, and red onions. Mix thoroughly. Season the mixture with salt, pepper and hot sauce. Sprinkle 1/4 of each cheese over the top of four individual tortillas. Top the tortillas with the remaining four tortillas. In a saute pan, heat 1 teaspoon of the oil. When the oil is hot, gently lay a quesadilla in the hot oil and pan-fry for 2 to 3 minutes on each side, or until golden brown. Remove the quesadilla from the pan and repeat the cooking process for the remaining quesadillas. Serve the quesadillas with the guacamole.

    I have not yet used the recipe because the green chilies were not used in the directions. Do they go in the tortillas? Or in the guacamole?

    This dish was fairly good. Not something we plan to make again--we like a lot of variety, but it was pretty tasty.

    These tasted just about like any quesadillas you'd have or make at home. I didn't follow the recipe entirely which may be why I wasn't super excited with what I came out with. The avacado's weren't ripe when I used them, so that came out differently, and I didn't have the monterey jack cheese, so I used mozzerella w/ cheddar... but either way it came out fine. I would definately make these for an appitizer if we had company or at a party.
