This is one of my favorites. I used fresh cherries, but have never made a full recipe since I usually use the ones that actually are a few days past fresh. The first time I tried it, I pitted the cherries by hand. Next time I bought a cherry stoner contraption from Williams-Sonoma, but still had to watch our for the pits!

I thought this recipe was good, but the crust didn't have a whole lot of taste. The cherries were great.

WOW! We loved this. I had to use up some cherries in my fridge and this was the perfect way. I halved the recipe and that is the only change I made.

I made this cobbler for a dinner party and it was gone in under 10 minutes (and I tripled the recipe!. If you're thinking of doubling or tripling, I found I needed extra cornstarch to get the right consistency. Also, put the baking pan/casserole dish on a cookie sheet or else your oven will be covered in cherries!

Even my picky teenage daughter loved the topping on this cobbler. Excellent recipe. We ate it warm with a scoop of vanilla ice cream on the side. Thank you Emeril!
