    i wasnt too sure about it, expecially at the making of the rue stage but once all the ingredients were in, it turned out fantastic, all my guests simply loved it!

    I have made this recipe many times. It is the best chicken and dumplings that I have ever eaten. I have never taken the time to review a recipe, but this one is out of this world. I don't feel like the peas and carrots are necessary for the flavor, but they make the recipe look more beautiful. I've made it with and without the peas and carrots and it's just as good either way. I find myself looking through recipes on food network and invariably, the ones I choose to make turn out to be by Emeril. I'm from the Mississippi Gulf Coast (a Katrina transplant and have eaten good food all my life, but Emeril is the best.

    this is my first time to make chicken and dumplngs and i followed everything except i use 2 tsp of baking powder instead. I scoop out all the veggies before putting the dumplings. My hsuband loved it, gave some to my neighbors and they thought it was awesome and they said i did it right. Bam...........

    This was great! I only used one chicken, and it was still pretty meaty. I kept everything else the same. I didn't have any wine on hand, and it still came out pretty good. It seemed a little on the sweet side, so I will probably try it with the wine next time. Still very delicious and was most excellent as leftovers also! This was my first attempt at chicken and dumplings, and believe I will be making this recipe more often.

    Been making chicken 'n dumplings for years, & this is the taste and texture I was after but could never quite achieve. My husband went on and on about the lightness of these dumplings! I didn't have any wine, & forgot the milk/cream toward the end, and this dish was still amazing. Bam! Thanks, Emeril--you did it again!

    GREAT recipe! My hubby doesnt like so many things. I always appreciate seeing my hubby ENJOY every bite. He was excited to have this delivered at work and it was FUN to watch him enjoy the many great flavors with NO complaints! YOU WIN. Thanks!

    THE best chicken and dumplings, but we thickened it w/ a lot more roux, upped the wine(hic, and skipped the essence. I just had pepper flakes and hot sauce @ the table for those who like it spiced up. Divided the dumpling recipe in 1/2--one w/ 2tsp baking powder for fluffy drop dumplings, one w/ baking powder decreased for flat noodle dumplings. My family LOVED both. Pleased EVERYONE in my family--a rare occurance. YOU'RE DA CHEF, Emeril! Thank you!!!

    Prepare to stuff yourself with this dish-absolutely delicious-I left out the wine and peas, but followed the rest to create a fabulous meal-everyone raved about!!
