I needed a quick Chicken and Dumplings recipe and used Emeril's as a guide. If you are used to the southern version of 'dumplings', definitely decrease the baking powder by half. It will yield a more noodle like dumpling. My recipe is as follows: 4 skinless boneless chicken breasts, 1 package of Knorr vegetablee soup, 3 carrots and 3 stalks celery, cleaned and chopped in large pieces, pepper to taste and enough water to cover ingredients. Bring all to a boil (yep the chicken was frozen! then continue to simmer for 30 minutes, until the chicken is cooked. I made the dumplings, using half the baking powder, and rolled them out thinly. I removed the vegetables with a slotted spoon and added the dumplings 5 minutes before serving. Everyone raved that they tasted just like Grandma's! Of course, if you like veggies, keep them in!

This is a wonderful recipe that we will make again and again. When I try new recipes, I ask my husband's opinion on them. This recipe falls into the "you can make this again" catagory.

These are better than my mom's c&d, but we won't tell her! I love the carrots and celery in it, which I've never done before. The seasonings give it a great "kick" of flavor. Delicious!

This seems like a labor intensive recipe but is really very easy. Love the dumplings. The cream is a great addition and makes the broth very very smooth.

I didn't want 'too fluffy' dumplings so only used 1/2 the amount of baking powder. This made my noodle-dumplings come out tender yet not of biscuit texture. The flavor of the stew was great. Messy kitchen but easy, easy, easy to make.

I have made this recipe about 5 times now. It is simply fantastic. It requires a little time in the kitchen getting each step done but well worth it. It is such a comforting dish. I make in on a Sunday afternoon and I even entertained with it last night! This is one of my top 3 recipes of all time!

Wonderful recipe. My family enjoyed it and said to be sure to keep this one to make again. I used 1/2 of the essence and didn't think it was spicy at all. Better for my little ones - thank you for the suggestion! It was a perfect meal after a long, rainy day.
