This is a soup full of delicious flavor! I used diced chicken breasts. I added zucchini and yellow squash for the veggies. I left out the spinach. Since I was serving it to children as well, I used 1/2 the paprika, 1/2 the black pepper and didn't add crushed red pepper or cayenne pepper. Such a versatile recipe that you can make by adding more or less of the veggies depending on what your taste is. Definitely a keeper!

Great soup! Especially if you like it hot! I used a frozen vegetable mix instead of the fresh vegetables in the recipe, just added them at the end when I put the rice & stock in. Fantastic! Makes those winter sinus problems clear right up! Love it

I put some fiery jalapeno & serrano & 3 tiny hotter than you know what red peppers in this as my 2 cups of veggies and it really made my fiance and I sweat -- In a good way! We absolutely love this recipe! I was recovering from the flu, bronchitis, and a sinus infection and this had me feeling 200% better within an hour of eating it. Flavorful and filling!

I love this recipe. I've made it several times. It's a great one pot meal, with lots of nutritious stuff. I've made it on the stove and in the crockpot. I've used rotisserie chicken and I've also used left over chicken I cooked myself. Either way, it turns out great every time!

A great chicken and rice soup. I've adapted the recipe using a crock pot or pressure cooker and both turned out great. Cook in the rice, spinach, crushed red pepper and assorted chopped vegetables as the final step if using a crock pot or pressure cooker. Include the onion, carrot, celery, parsley, basil with the meat and spices. Definitely a keeper.

This recipe was sooo good. It is something that my grandmother in Puerto Rico will make, the only thing that i decided to add is Plantain balls. It was definitely worth it.

i love this chicken recipe! It made my daughter felt better right away after giving her just one serving. It is the best! I remember how mother used to service me arroz caldo when I was young girl, and it always made me recuperate fast from any ailments that I was having then. This recipe is not only delicious; it is also loaded with tons of nutritious stuff! Thank you Food Network! Marienellie Bautista
