This may take a little bit of time, but well worth it, best Gumbo I have ever eaten. Loved it and will make it again and again. Be careful during your rue phase, easy to burn. AAAAAAAA++++++++++++++++

I never had gumbo before so I have nothing to compare this to but I love this dish. I make the whole pot and my boyfriend and I eat it up. I like okra so I add some frozen ones when I heat up my left-over gumbo. Best winter comfort food. Thanks Emeril!

I don't usually spend this much time in the kitchen but the results were great.

I am from New Orleans have tried many gumbo recipes but this one is truly the best. My husband loves this so much we have had it twice this month. I add 1 lb shrimp for the last 5 mins. because I like shrimp. Delicious. Just keep stirring the roux until it is medium chocolate color. Darker the roux the more flavor. Enjoy!!

i spent my entire sunday on this gumbo and over $25.00 on ingredients. my family and i finally dished the rice and gumbo into our bowls and the dish was too salty to eat! disgusting! i tried to salvage the pot by adding two halved potatoes to no avail! i am very disappointed as well as exhasperated. :( advice to anyone trying this recipe: leave out the salt in this recipe. my guess is that the sausage adds enough salt to season the whole pot.

great recipie - I've tweaked mine to include double the chicken & sausage, plus big slices of mushrooms - that gravy is just fantastic and the woody flavor of the mushrooms is a natural.

This recipe was great! The gumbo was fantastic. though I used only 2lbs of chicken thighs, which I thought was enough. you could also use a little less file powder because one tablespoon really thickened it up

Made this for Super Bowl along with Spiced Nuts Recipe. This was my first gumbo recipe and was very easy not to mention WOW it was good. Gumbo was gone before 2nd Qtr was over. Just the right amount of spices. I added another Lb of chicken & a cup chicken broth. Can't wait to make it again.
