    My mom and brother said these were the best pork chops they ever had. They never enjoyed pork chops before b/c the pork chops were always dry, but that these ones were moist and juicy. I didn't have any saltines, so I just used bread crumbs. Also, I only had bone-in pork chops, and I still was able to pound them, but they just took a little longer to cook, so I finished them in a 350 oven, checking the internal temp.

    Easy to make even for a beginning cook. Texture of the breading was just right. I had never even attempted to bread and fry anything Emiril and Paula explained it beutifly then I actually did it on my own. Thanks for all your help.

    This is a great meal! The andouille adds just that special something to the potatoes and the pork is so tender and juicy! Even my 4 year old loved it! It is definately a keeper.

    Takes the classic pork chops & gravy that mom made on a weekly basis and adds some special twists to take it up a notch in taste and elegence! Very easy and very tasty.

    This meal was good. I made my own mashed potatoes without the buttermilk. So glad I did because after eating this, I wasn't feeling so well. It was very heavy on the stomach. Won't be making this one again. Don't get me wrong, if you are used to eating like this, then this dish is for you. I never expect Emeril's recipes to be low-cal.

    This recipe won rave reviews at our house! My kids (6 and 2 loved them! Excellent taste, not greasy, very, very good!

    This was a really easy meal to make and all the different flavors were amazing. The taste really complimented one another. My family really enjoyed it. I substituted the andouille sausage for polka kilbasa sausage.
