On the show, Emeril said he was going to fry at 375 degrees. I missed the part where actually fried it, but 300 degrees seems a little low. Which temperature is correct? I have not tried this recipe, but I agree with soaking in buttermilk and letting chicken sit for 10 to 20 minutes after coating. Anything he does is great and I would give this top rating if we can get the temperature correct.

Just watched the show and the temp in the written recipe is incorrect. Emeril says to fry it at 370 degrees

This is one of the best chiken recipes that I have come across. The chicken was very moist and full of flavor. My family loved it. It will be a regular in our house.

I have never made a recipe of Emeril's before, and I have never made fried chicken, but this was AMAZING!! Usually, when you get fried chicken out, so much of the flavor is in the crispy exterior, leaving the chicken somewhat bland. There is a ton of flavor in the coating, but it also goes all the way through the chicken - in every single bite. WOW ~ I will definitely make this again. I did cook it at 300, and it turned out fine (in regard to others who questioned the temp. Definitely try this one!

My friends loved the taste however the color after frying them was too dark...was it maybe because I put the double of cayenne than the recipe suggests?...If somebody knows the answer please posted.
