Seemed like I was in the kitchen for days, but well worth it! Awesome texture, flavors flow very well, great crowd pleaser! Will cook it again VERY soon!

Love this recipe as I have made it at least three times now. Once, I hadn't any mushrooms and decided to substitute artichoke hearts. Worked just as well.

This was the best homemade lasagna I?ve ever had! I?m not a huge fan of the heavy lasagnas normally found in Italian restaurants or the frozen ones from the grocery, so this is the PERFECT alternative! The only down side is that it took a bit longer to prepare than I was anticipating.
We halved the recipe bc there were only 2 people eating, but we added 1 fresh zucchini and one fresh yellow squash and kept the full amount of spinach?mmm! Amazing! We also tossed around the idea of using mozzarella cheese instead of so much parmesan to lower the sodium and increase the creaminess! Also, watch out for Emeril's ESSENCE Creole Seasoning?it packs quite a punch!
