    I too found this recipe while looking for something other than baked goods recipes for rhubarb. Wow! The flavor is an unexpected delight and the gelatinous nature of the rhubarb makes this one of the best sauces, both in texture and how it adheres to the chicken, I have ever had. I belong to a vegetable co-op that always provides an abundance of rhubarb, so I freeze it so I can make this dish again and again over several months.

    I found this when I was trying to come up with something new to do with rhubarb. We used chicken thighs and the meal was loved by everyone - even our 2 and 4 year old kids! We then sent it to family and now it has become a family favorite!
