WOW! I will never buy hummus from the store again. It took no time at all and it tastes so much better than any I have ever bought- I have tried them all!

Excellent recipe. Basic, easy to make, and delicious! I haven't had a bad Emeril recipe yet and I've made quite of few of his. Thanks, Emeril!

My go to hummus recipe. We add roasted red peppers or, if we want it spicy, some adobo sauce. Nice texture. It's a good way to add some raw veggies to our diet.

i use dehydrated chick peas instead of canned, and when i am making it for myself (and not a party i use less olive oil to cut down on the fat. it makes it not as smooth and a bit chalkier, but is still so yummy. i also use more garlic, as i do in every recipe. guaranteed to ward off vamipires with your breath!

I made it exactly according to the recipe, and found it to be way too garlicy and with too much tahini flavor. So I doubled-up the amount of the other ingredients and it turned out very good -- still plenty of garlic flavor (I'll probably use 1 tsp next time, instead of 1 Tbs. Goes great with fresh uncooked vegies like bell peppers, baby carrots, & broccoli

1/4 cup water, 1/4 cup olive oil, 1 teaspoon salt. I also cooked the garlic for 1 minute in the heated olive oil. Compared to the one i buy it needed a bit more UMPH!
