    It was fabulous. My husband commented on how great the flavor was and tried to figure out what I did differently. I told him it was Emeril's recipe and I think the Creole Essence made the difference.

    I only made the chili con queso, and not the chili con carne. It was so easy to make. I am only 15 years old and me and my friends made it very easily. I was very cheesy and very spicy. It was melty, creamy and delicious. The consistency was perfect. It was better than anything I had ever had at a restaurant or out of a jar.

    I have made the Chili con Queso many times, and served it without the con Carne. It is fantastic!

    I just put it into the little crockpot, and set it on low. It also freezes pretty well (let it come to thaw in fridge, and heat in micro, and refridgerates ahead of time well.

    Hooray for this one!

    For being an on-the-go gal, recipes with a lot of prep work are usually out of the question. However, I'll make an exception for this delicious chili. Be sure to set aside enough time to prep and cook. If you like spice, try substituting a Habanero chili for the Jalapeno. I've also tried this with ground turkey and it has turned out just as well as before. This recipe yeilds over a quart, so be prepared for leftovers.

    Great with turkey instead of beef! Also added a can of beans and a chopped jalapeno. Yum!

    I'm addicted to the Emeril Live Show and the Essence of Emeril. I tried this recipe for Super Bowl Sunday this year and I must say I think Emeril would be proud. It was absolutely delicious and I can't believe I pulled it off without any drama! It was actually very easy to put together and so very tasty. I enjoyed it very much and have cooked this dish twice since then. A+

    There are so many variations that you can play with in this recipe and I've done just that on several occasions. For a smokier flavor I used chiptole in adobo sauce instead of poblamo chilis, beef broth and beer as liquids, etc. What great fun and good eats!
