Finally a chile that doesn't need beans and the zesty flavor and texture keeps you coming back for more. This chile is in a catagory all by itself and should be the staple for winter eating. The chips and zesty cheeze are perfect with this also. This recipe isn't broken, so don't try to fix it.

Both are great. I would definately make the queso 1st and use as a dip then combine as recommended to serve with the chili.

Didn't make the chili con carne but made the con queso. Maybe I did something wrong but don't know what. This con queso tasted like flour paste, with little or no cheese flavor. I'll stick with Velveeta and Rotel from now on. Sorry, Emeril. You struck out on this one.

My whole family loved both the chili (with no beans and the con queso. I had made the cheese sauce for nachos and even hubby was suprised at how good a cheese sauce turned out without being lumpy. This recipe is a keeper in my book.

This chili recipe is very good. I loved all the ingredients used in it and my husband and I loved it! I didn't make the con queso, but added shredded cheese and sour cream and ate it with the tortilla chips!

this is a great chili on its own, but I added Corona beer where it called for water, added a bit of chipolte powder and some kidney beans. I have never had chili con Queso in my chili before and alone, the con Queso tasted good, but in the chili the flavor gets lost because the chili flavoring overpowers it. I would make it as a great dip beforehand and stick to the standard shredded cheddar on top which adds a nice sharp contrast.
It is easy and great alone, but the creative types, the variations are endless.
