This pie was okay. Not as good as I thought it would be. It just didn't taste right. It almost had a coffee/liquor taste. The toasted coconut was delicious though. We will finish eating it but I probably won't be making it again.

I made this pie last weekend for my family and it was a GREAT hit!!! Even family who said "I don't do dessert" came back for more. I think the "easy" rating could be a little mis-leading for novice bakers with the folding in of the whipped cream and meringue. I will make this again, and again, and again....

Thank you Ann for clarifying. I watched the show and felt that Emril was more concerned with "good TV" rather than how the pie should actually be prepared. Afterall, people want the winners' recipes, not the rushed quick version that make good T.V. Anyway, this has bugged me for a while, and I've noticed it with other Emril show challenges - just rushing through and not even allowing the winners correct him if need be! Anyway, the pie looks great and I am going to make it. Will report back.

If you follow the recipe, you should end up with your finely shredded coconut golden brown all over. Be sure to shape the crust along the sides and bottom of the pan, not just the bottom like on the show. Also, pile the filling in so it's not flat like in the photo, and literally sprinkle or toss the reserved coconut on top. The result should be a tall, fluffy pie with a light sprinkling of crunchy browned coconut, rather than a flat pie with a coconut mosaic pressed into it.
