I've always been a fan of chorizo. After making this recipe, I've convinced my wife that she likes it too. This was a wonderful dish Emeril! Thanks.

I made these nachos almost-exactly according to the recipe (except that I used store bought chips, and they were SO goooood!! They were easy to make and different from how I usually make nachos- very delish and great for something different!

I couldn't find Chorizo sausage, but another website said to use Italian sausage as a substitute. Aside from that change, I made as directed. SUPER YUMMY!!! My husband said these were the best nachos he'd ever tasted. His only complaint? "These are a little too high class for a football game!"

I made the cooked mixture a day ahead and then just before I put it in the oven, made the layers. It was a crowd pleaser!

I changed the recipe just a bit. I used one small red onion instead of the white. Its a little sweeter and no beans. I don't care for beans. I also added diced fried pork using the fat from the chorizo to cook in and seasoned it with Emeril's Essence. The pork replaced the beans. It turned out SO GOOD!!!! I will definitely make this again.

has anyone tried using the melted nacho cheese? I usually always have nacho cheese for nachos, but I want to make these using the nacho cheese instead. not sure if it will work together...???

This recipe is utterly delicious. I made it for a starter at a dinner party, and everyone gobbled it up. Everyone loved it. It's easy and makes a lot, but it was gone, gone, gone. You must try this recipe. You won't regret it.

I stumbled across this recipe one day and had most everything on hand to make them, so I gave it a shot. I didn't make my own chips (I had just bought a big bag and I didn't add any water to the pinto beans just because I though they would be too runny. But, they turned out great and my Fiance couldn't get enough. Makes a ton of food though so make sure and cut in half for two people, or just have some people over. I served them with Margaritas and they paired perfectly. Super easy and super tasty! :

Absolutely love the chorizo in this! My husband doesn't usually go for this kind of food but asked for seconds...
