    Put garlic in a blender drizzle oil? C'mon! Catalan style allioli is made w/ garlic (3-5 cloves and salt (pinch, which is crushed to as smooth a paste as you can manage w/ a mortar and pestle, the oil (1 cup is then drizzled in to it as slowly and painfully as you can stand. Working the garlic w/ the oil is gradually creating an emulsion and the more you work the mortar and pestle the more oil you can add. A true all i oli artist can stretch 3 cloves of garlic in to a cup of oilve oil. It takes 10-12 minutes to make! Use only extra virgin and lighter oils work the best! (Keep any green spouts out of the garlic. Use it right a away it can break. Make this! It's the ketchup of Catalonia! Use it on anything.
