    I loved this recipe as I do with most of if not all of Emeril's recipes. The only changes I made was to use roma and grape tomatoes and a little bit of sugar to cut the tartness from the tomatoes. I also used panko instead of bread crumbs for the extra crunch seasoned with Italian seasonings and it was really good. Oh and used regular mozerella instead of smoked. I wish I could have found it, but it was still delicious just the same.

    Excellent! Boyfriend loved it, too. Chicken was moist and not too breaded. Make sure to carefully watch the broiling phase. I got it just in time! Loved the balance of seasoning.

    very tasty
    I gave this 4 stars because I didn't do the egg and breading. I brined the breasts for 30 minutes, seasoned with s&p, asst herbs and olive oil. Sauteed them and finished it as per recipe. I served my husband linquini and mine over sauteed spinach. It was very good and I will be making it again.

    I JUST FINISHED MAKING THIS RECIPE FOR MY HUSBAND AND IT WAS A SUCCESS! HE ABSOLUTELY LOVED IT!. IM VEGETARIAN SO I DIDNT GET TO TASTE IT BUT IT DID SMELL GREAT! ALSO I DIDNT HAVE MOZZARRELLA SO I USED PARMSAN ROMANO AND IT WORKED JUST AS GREAT! ITS THE BEST CHICKEN PARMESAN RECIPES I'VE EVER MADE!

    Everyone has tried it in one form or another-- this happens to be the best recipe for chicken parmesan I've ever had! A new family fav...and one of the fam members is a notoriously picky eater-it's one of the best endorsement I can think of.. :p

    I can't get over this tomato sauce.... I think I'm in heaven. I just used the tomato sauce recipe and my God why would anyone try anything else? Simply mind blowing. Made this with Giada's spicy meatball recipe for meatball subs and WOW between the two, best meatball sub EVER.

    This was a simple recipe with great results. I substituted smoked gouda for the mozzarella (didn't have and it came out great. I see how the 'smoked' flavor in the cheese makes the difference. Also, used panko instead of reg bread crumbs to make it crunchier. Will make again using the roasted tomato sauce recipe as I'm forever searching for the best tomato sauce.

    My family really enjoyed this dish! The chicken was tender and very well-seasoned. This was our first time trying essence. Because we were short on cash, we made a few small changes in the ingredients - regular mozzarella instead of smoked, jarred sauce and plain parmesan instead of parmigiano-reggiano. I'd like to try it as written eventually, but it turned out excellent this way. Yum!

    Made a commitment to try new meal ideas in the kitchen after Thanksgiving and this was one of the first and will definitely be a repeat in our kitchen. Even my son, who hates everything, says this is his "new favorite". We have also started using the oven-roasted tomato sauce in all of our pasta and pizza recipes. It's That Good!
