This was so easy to make, I'm only 15 and I made it. My dad and my picky brother loved it. This is totally a keeper.

Great main dish. It took a little work to prepare..must have some time set aside to make this one but well worth it. Great flavor, nice serving amount. I pounded the chicken breast slightly before preparing the dish so they would cook evenly. The tomato sauce was wonderful..would also make a great soup with a little basil added. Couldn't find smoked mozzarella or romanitas at the local grocer so I used regular mozzarella and roma tomatoes, still turned out great.

I love to make this recipe for dinner guests. A lot of them have never heard of smoked mozzarella. It gives the dish such depth. The tomato sauces is to die for. I defiantly will be keeping this recipe close by.

I made this for my family this weekend, and they loved it. True Emeril-quality was reproduced, I think. The only substitution I used was to use original essence instead of the Bayou Blast seasoning. I thought that this was an easy-to-follow recipe, and was not difficult to execute it. I might add a little more garlic and some additional herbs to the sauce. I might also prepare the sauce a day or so ahead, too, because it does take a bit of time.

Made this last night and it was yummy, but I don't think it will be replacing my standby Chicken Parm recipe. I used provolone instead of smoked mozzarella as I forgot to pick the latter up at the store.
    The sauce was really yummy.
    Thanks!
