Wonderful recipe. We've made a few modifications and it is even better. Use fresh instead of dried shiitake mushrooms if available. 9 (instead of ten cups of chicken broth, 2/3 (instead of 1/3 cups of chopped fresh ginger, 1 teaspoon (instead of 3/4 t crushed red pepper and 1/2 cup of thinly sliced pork (instead of 1/4 c. This makes it a meal in itself.

I made this using canned mushrooms and threw everything in the crockpot. It came out well and we liked it.
