I saw Emeril make this on one of his shows. It wasn't the one with an audience. Anyway, he added shallots and red chili pepper flakes and that was what I did. It came out delicious. I make this regularly for my family and they love it. It is so easy to make, even someone working the pan for the 1st time can do this.

I enjoyed this recipe and the taste was just as expected but as soon as my eggs hit the pasta, they scrambled. I did remove the pan from the heat source when I did this too. Should I wait until it cools a little bit? I don't understand what he means by adding the eggs to the pasta and then whisking...? Can someone tell me how to avoid getting scrambled eggs next time?

I've made this classic carbonara recipe over and over again for my family, and the dishes are licked clean everytime!! That's saying a lot, with two picky little eaters in the house! I do usually cut the recipe in half, as the full recipe makes too much for us too enjoy in one sitting, and everyone knows that you can't reheat carbonara for leftovers ~ you just get scrambled eggs with pasta! Great, classic recipe!!

I made this for the first time for Christmas Eve lunch last year. It was so good! Even my kids liked it. I did make one minor change...I reduced my pasta to 3/4 pound. We all like that way, it makes the flavors bolder.

After traveling to Italy this is as close as I could find to the Carbonara we had I do add onion with the bacon.

Even better if you use pancetta! So nice to see an authentic carbonara recipe on FN. Giada totally messes it up. This is the real deal.

This is very good and so simple to make. I took advice from others and had all the ingredients readily available at the start of cooking because it does come together rather quick. It is very easy week night meal and it heated up nicely the next day for lunch. I will make again and again.

Tasty, but too oily. Carbonara should be creamy, and this is not at all. Not good for leftovers.
