Like the name suggests I used a lot of the "leftovers" I did not use the ham but increased the sausage and shrimp. It was GREAT. Will definitely make it again.

This recipe is seasoned just right -- except with all the sausage and ham, it ends up being a *bit* too salty. I might try cutting the amount of sausage in half next time. Otherwise it is delicious! I hope I have a use for the Creole seasoning for another recipe.

It has such a good flavor. My husband loved it which made me happy since he is from New Orleans and is a hard critic of food from his hometown.

I had a couple of chicken breasts, a package of hot sausage and some shrimp and this was the perfect dish for it.
It's the perfect spice, not too hot, but a nice after bite.
Also, I used brown rice and it worked very well. Sometime brown rice can be too nutty in flavor, but the heat of the dish blended well with the brown rice.

I made this once before following the directions exactly and it was just a little too spicy. I made it again this past weekend for a party cutting the amount of cayenne in half and it was very well received, not only by myself, but my guests as well.
