    This is my GO TO Jambalaya Recipe. I LOVE IT!!! Every time I make it of course I add something to make it more mine but basicly this recipe is TOPS Thank you Emeril. An older Fan.

    Like the name suggests I used a lot of the "leftovers" I did not use the ham but increased the sausage and shrimp.It was GREAT. Will definitely make it again.

    wanted to make jambalaya since my boyfriend never tried it and chose this recipe...and boy it was a great choice! my boyfriend and i took on this recipe and it was a great experience. it was very easy, but time consuming. our final product was DELICIOUS..a bit too spicy..but still great!

    This recipe is seasoned just right -- except with all the sausage and ham, it ends up being a *bit* too salty. I might try cutting the amount of sausage in half next time. Otherwise it is delicious! I hope I have a use for the Creole seasoning for another recipe.

    very easy recipe, always a crowd pleaser. I remeber the first time i made it on a new years eve over my brothers, i was the entertainment, acting like Emeril did when I watch this.

    I had a couple of chicken breasts, a package of hot sausage and some shrimp and this was the perfect dish for it.

    It's the perfect spice, not too hot, but a nice after bite.

    Also, I used brown rice and it worked very well. Sometime brown rice can be too nutty in flavor, but the heat of the dish blended well with the brown rice.

    I made this once before following the directions exactly and it was just a little too spicy. I made it again this past weekend for a party cutting the amount of cayenne in half and it was very well received, not only by myself, but my guests as well.
