Hello, this is not a "" cake. This is a coconut cake, with coconut frosting in between the layers. A coconut cream cake has a custard-like coconut cream that is cooked first, then added between the layers. Call it like it is, Emeril!

I made this cake today for my son and it is wonderful!!!! It was so simple and and easy to follow the recipe. The only changes made...I used a pound of confectioners sugar, and the only nuts in the house were walnuts. The cake is very moist and delicious...I will definitely be making it again.

This cake was delicious. I made it for my daughters 17th birthday party. My daughter didn't like the idea of coconut in the recipe, but when she and her friends tried it, they raved! I will make this again and again

This cake came out perfectly the first time. Two things though, the recipe calls for 2 cups of flour. It does not specify all purpose or self rising. I used all purpose. It turned out great. Also the recipe calls for freshly grated coconut. I used the bagged coconut found in the baking isle.
This cake was a big hit and impressed a lot of people. I will definately fix this again for special events.

I have to say, this cake has got to be one of my favorites. The cake was very moist and the frosting was absolutely spectacular! This is definitely worth making over and over again. The whole family loved it!

The texture of this cake was wonderful - light, fluffy and moist. The frosting was very good, but the cake itself was lacking in flavor. When I finished the batter, I noticed the recipe does not call for any vanilla or salt. I think with the addition of these, it would certainly be 5 stars. BTW, I used 2 9" pans and it worked fine.

If you like coconuts and pecans, this is your recipe.
