    Holy crap. I would give this 10 stars if I could. I halved the recipe, left out the dill, left in the cucumber seeds, and changed the yogurt/sour cream ratio a bit (2 c. yogurt/.5 c. sour cream, used an extra large jalepeno for some extra spice.... this may be my new favorite dish. Also used an immersion blender instead of blending in batches. I was worried it would come out too thick and heavy, but it was light and creamy and perfect. Served with lamb meatballs and toasted pitas. I make tzatziki sauce pretty regularly and am always saying I could drink it.... this is even better and I actually CAN drink it!

    Excellent summer soup, I had been searching for the perfect creamy Cuke soup recipe and this is it! I halved the recipe and garnished with a bit of smoked salmon and sour cream and dill it was beautiful. 9 out of 9 guests loved it as well, including my 16 year old son...I did skip the mint...Still great!

    I halved the recipe and it was plenty for 4. I also was looking for something more light and refreshing (not so thick, rich & spicy so I omitted the jalapeños and added a cup of homemade chicken stock (or canned low-sodium and it was just right. I also had extra cucumber so I added a bit of diced cucumber for garnish & texture. Also, if you don't want to buy so many herbs only to end up using so little of it, skip the chives and just use the dill for garnish instead.

    Very tasty. I didn't seed the cucumbers, still delicious. I used my Vitamix to puree. Made a huge amount of soup. My husband is a not a fan of cold soup but loved this. Very good for summertime.

    We harvested lots of cucumbers from the garden and needed a good recipe to use them up. This fit the bill and we really like it a lot. It was delicious. I made a few adjustments, though. I halved the recipe and that was more than enough to feed my family of 4. I also had a bunch of serranos from the garden so I removed the seeds/veins from one and used that instead of jalapeno. I left out the cayenne because I was feeding a 2 and 7 year-old. There was a tiny bit of spice but not enough to turn them off. I'm not sure why the recipe called for all the fine dicing and chopping. I cut the cucumbers into large pieces, put the garlic through my garlic press, but pretty much just left everything else whole. I ran it through to the blender. It came out great! I hope it freezes well because I want to make it again and freeze half for an easy meal in a few weeks. Yum!

    Great on a summer day! this was yummy!!! but a little too hot for some of our guests. if you don't like it spicy then just take the seeds out of the jalapeno and it should come out just perfect.

    This is the answer to our sweltering summer months in PA. So cool and refreshing. Each bite offers a different and delicious bite. I use fat-free everything for dietary restrictions but with all the wonderful flavors no one knows. This is the dish everyone requests when I offer to bring a something to a gathering.
