Thanks once more, Chef, for the outstanding recipe! I used regular fresh cucumbers and got all the veggies from the farmstand. I just wanted to try something different and have never had cold soup before. My sister and I both thought it was superb, and I will be making it every summer. So flavorful, has a crisp, interesting texture, it's nutritious, satisfying, and makes a great summer lunch. Now we're trying a different cold soup every week. Thank you, Food Network and all your wonderful chefs!

This was deeelicioso! Time consuming with all the shopping but I enjoy that kind of thing. I added extra garlic, some Habanero peppers and a lot more dill and mint- dried not fresh-didnt have any. Also about 1 cup less yogurt. Full fat yogurt and sour cream made it nice and creamy.

A wonderful summertime appetizer soup! I served this as an appetizer to my book club with 100 degree weather outside & it was delightful. Everyone raved about how delicious it was. I love the juxtaposition of Emeril's cold soup with the heat of the cayenne pepper. One adjustment I made just to lighten it up a bit, was use light sour cream; didn't miss the removal of full sour cream. It is still a bevy of outstanding flavors.

What a delicious and refreshing soup. Absolutely fabulous!! Everybody loved it and asked for the recipe. A lot of chopping but worth every minute. Highly recommend it for a dinner party.

When I first saw this I was like "Cold cucumber soup, what the heckle and jeckle is Emeril thinking? He must be outta his cotton picking mind". But as usual Emeril was right this soup (Im going to borrow an expression from the hippies Da Bomb! It is cold and refreshing like a dip in the watering hole with your best friend in the middle of summer and after your done you go back to your friends house and share some scooter pies that his mom made the night before. Then the heat from the peppers sneaks up on you like your friends creepy older brother who chain smokes in the basement, and stares at you when your eating spaghetti. I like this soup!

My new favorite cold soup! Absolutely fabulous, with a wonderful "kick" to it. Very easy to make, if a good bit of chopping.... Highly recommend! My guests loved it!

A beach house hit! I enjoyed this recipe and will make it again in a couple weeks. Next time, I'd like to try more plain yogurt and less sour cream, just to cut some calories. But it was fine the way it was. I'd highly recommend this, especially for a crowd. It made a lot, and we ate it at several meals during the visit. And as a host, it's nice to have food that is done in advance, so you can enjoy more time with your guests.

I made this for the first course for my mom's birthday dinner and it was a huge hit! It was everyone's first time having a cold cucumber soup and everyone really enjoyed it. It was perfectly seasoned....loved the small amount of heat from the jalapenos. I also used Greek yogurt instead of just plain ole yogurt. Cold soups are so refreshing especially during Houston summers. Thanks Emeril for a definite keeper!

This is an easy recipe to prepare and is excellent with the proportions as listed. It rivals the best soups I've had in finer restaurants.
If you love cool and refreshing cucumber soup, this recipe is for you!
