I win first place in the "other" category at my work's annual Chili cook-off every time I enter with this chili. I add white beans, use white corn, and don't add the goat cheese until right before serving. My family loves it too. Absolutely delicious!!!

I just made the cornbread. It came out great, though it took forever before it was actually done (fork would come out clean but when I tried to slice it, it was still doughy in the middle. Nice change from regular cornbread and easy introduction to cooking w/ a starter.

I have not tried this cornbread, but I recently made this great goat cheese queso and served it with tortilla chips at a taco party. The goat cheese queso was such a great way to "gourmet up" this casual Mexican themed event. It got more compliments and recipe requests than anything else I served, and it was absolutely simple and quick to make. I made a double batch and the bowl was scraped clean. I used frozen corn, which worked perfectly fine. PS -- my other tips for a great taco party are Tyler Florence's margheritta and carne asada recipes, also from the food network.

Alright I didn't make the chili, but I did make the cornbread and it's awesome. I am real lover of all kinds of cornbread and this is definitely something to try out. My roommate loved it as well. Thanks Emeril!!
